I. Scene

The factory builds widebody commercial jets. The 747 program ran continuously from 1968 through the final delivery to Atlas Air in January 2023, the line that defined the building for its first 55 years. The 767 freighter, the 777 family, and the 787 Dreamliner share the floor today, with three rotating shifts of roughly 35,000 workers (Boeing corporate data, Seattle Times reporting).
The operating consequence for the Everett restaurant is a shift schedule unlike the rest of the Puget Sound food economy. The first shift starts at 5:00 a.m. and breaks for lunch at 11:00 a.m. The second shift starts at 3:30 p.m. and breaks at 8:00 p.m. The third shift starts at midnight and breaks at 4:30 a.m. A Boeing-adjacent kitchen that holds a four-hour-shifted daypart curve wins the lunch and dinner channels that the Seattle commute cannot.

The cuisine bar reads top down by share. American casual, the diner-burger-grill-pizza tier, holds roughly a third of the count and most of the Hewitt Avenue, Broadway, and Evergreen Way storefronts. The Boeing breakfast economy feeds this tier first, and the AquaSox post-game crowd feeds it second.
Mexican is the second largest category, anchored by the Casino Road corridor where Mexican and Salvadoran families have built taquerias, mariscos counters, and full-service rooms across three decades. The Mexican ticket book is heavy on weekend family service and on Saturday morning pan dulce traffic, with a steady weekday lunch channel feeding the Boeing south gate crews.
Asian (Vietnamese pho, Chinese-American, Thai, Japanese) carries the third share. XII. The Math
A $40 Boeing shift order, two ways: 27 percent vs 14 percent take.
A $40 Boeing shift lunch order is the steady-state Everett ticket. A four-person 777 assembly crew on the same shift. Pickup at the bay door. The chart traces what the operator actually keeps under two configurations.
On the marketplace side, a typical 27 percent commission ($10.80) plus Visa interchange and gateway fees ($1.20) and a $1 platform delivery fee leaves the operator with roughly $27.00 on a $40 ticket. The customer paid roughly $50 once the marketplace delivery fee and service fee were added. The operator's margin on food and labor lands inside the remaining $27.00.
On the direct side, the same $40 ticket carries a Stripe processing fee (roughly $1.50), no platform commission (DirectOrders is a flat $249 a month subscription, amortized to roughly $0.65 per ticket at 380 tickets a month, the median for an Everett Boeing-adjacent lunch counter), Washington 9.8 percent combined sales tax passed through to the customer, and an Uber Direct dispatch fee paid by the customer rather than netted from the operator.
