It is 9:42am on a Saturday in October. The kickoff at Notre Dame Stadium is 3:30pm. The first 312 game-day orders are already on the kitchen board.
South Bend on a home football Saturday is one of the most concentrated hospitality events in the American Midwest. Notre Dame Stadium holds 77,622, and on game day the corridor from the Indiana Toll Road exit at Cleveland Road, through Eddy Street Commons, across the campus, and back down to the East Bank and Mishawaka, is one continuous parking lot of Winnebagos, alumni SUVs, parents arriving for the visit, and a stream of restaurant runs ordered the night before.
Of the kitchen board's 312 orders at 9:42am, the breakdown is unambiguous. Two hundred and forty-six were placed directly on the restaurant's own website over the previous five days, with a customer-chosen pickup window between 10:00am and 1:30pm. Tailgate trays, breakfast burrito bundles, parent-weekend brunch deposits, and the standing recruiting-dinner contracts. The kitchen pre-prepped them in three waves the day before. The remaining 66 came in over the marketplace channels, arriving on demand, with the marketplace's stated promise of a 30 to 45 minute delivery window. Of those 66, eleven have been bumped, four are at risk of customer cancellation, and the courier ETA on the rest is moving in the wrong direction. Game day in South Bend is the single event most likely to expose which line of the kitchen board carries the restaurant's margin and which line absorbs the marketplace's operational cost.
The 246 direct orders will be handed across a counter, hot, on time, with the customer's last name on the bag, between 10:00am and 1:30pm. The kitchen knows where every one of them goes and what time each customer is collecting. The 66 marketplace orders will arrive as a stream of unpredictable interruptions, with a courier showing up at the back door demanding an order that the kitchen had not yet started preparing because the marketplace ETA was set wrong for a 77,622-seat stadium event that the marketplace's dispatcher did not model.

II. The Stadium
The House that Rockne Built sits 1,200 feet from a 134-foot mural of a risen Christ. The mural watches the north end zone. The crowd is 77,622.
Notre Dame Stadium opened in 1930. Capacity has settled at 77,622 since the most recent expansion. In every one of those four cycles, the operator that is running the pre-order channel on its own site is harvesting the calendar. The operator that is renting the channel from the marketplace is paying a commission per order that, summed across a six-Saturday season plus graduation plus Cubs nights, is worth multiple months of staff payroll.
